Ingredients

500g beef mince

1 egg
-
¼ cup breadcrumbs (or almond meal for GF)

2 tbsp Mingle Use Me On Everything Seasoning

1 zucchini, diced
-
1 red capsicum, diced
-
1 red onion, diced

2 tbsp olive oil
-
300g spirals pasta
-
1 jar (500g) passata
-
½ cup grated cheese (cheddar or mozzarella)

Optional: a handful of baby spinach
Directions
Preheat oven to 200°C.
- In a bowl, combine mince, egg, breadcrumbs, and 1 tbsp seasoning. Form into 12 small gold sized meatballs.
In a large oven-safe dish, brown meatballs on all sides for 3-4 minutes.
Toss zucchini, capsicum, and onion with 1 tbsp seasoning and olive oil to the meatballs.
- Bake for 15 minutes, turning once, until meatballs are nearly cooked through and veg is softened.
- While baking, cook pasta until just under al dente. Drain.
- In a large bowl, combine cooked pasta, passata, and baked veg. Gently stir in meatballs. Add baby spinach if using.
- Transfer everything to a baking dish (if not already in one). Top with grated cheese.
- Bake for 15 minutes until bubbling and golden on top.
Recipe Note
Tips:
• Gluten-free: Use GF pasta and breadcrumbs
• Make ahead: Assemble and refrigerate before final bake (up to 24 hours)
• Freeze: Cools and freezes well in portions
