500g beef mince

1 egg

¼ cup breadcrumbs (or almond meal for gluten-free)

2 tbsp Mingle Garlic & Herb Seasoning

1 tbsp olive oil

2 cups cooked rice (brown or white)

½ cucumber, diced

½ cup cherry tomatoes, halved

¼ cup parsley, finely chopped

¼ cup mint leaves, chopped

Juice of ½ lemon
-
1 tbsp olive oil

½ cup plain Greek yoghurt

1 tbsp lemon juice
-
1 tbsp olive oil
-
1 tbso Mingle Garlic & Herb Seasoning

Herby Yoghurt Sauce:
Directions
Make meatballs: In a large bowl, combine beef mince, egg, breadcrumbs, and Garlic & Herb Seasoning. Mix well and shape into 12–14 small meatballs.
- Cook meatballs: Heat oil in a non-stick pan over medium heat. Cook meatballs in batches for 4–5 minutes per side until browned and cooked through.
- Toss salad: In a large bowl, mix rice with cucumber, tomatoes, herbs, lemon juice, olive oil, and season to taste.
- Mix yoghurt sauce: Combine all sauce ingredients in a small bowl. Adjust lemon to taste.
- Serve: Plate rice salad, top with meatballs, and drizzle with herby yoghurt.
