Ingredients
- 500g chicken tenderloins
- 2 tbsp Mingle Backyard BBQ Seasoning
- 1 tbsp olive oil
- 2 corn cobs, cooked and kernels removed
- 1 tomato, diced
- ½ red capsicum, diced
- 1 small cucumber, diced
- ½ avocado, diced
- ¼ small red onion, finely diced
- 50g feta or cheddar, crumbled or diced
- 1 tbsp lime juice
- Optional: fresh coriander
Directions
Toss chicken tenderloins with olive oil and Backyard BBQ Seasoning.
- Grill or pan-fry over medium heat for 3–4 minutes per side, until golden and cooked through.
- In a bowl, combine corn, tomato, capsicum, cucumber, avocado, onion, cheese, and lime juice. Toss gently.
- Serve chicken tenders alongside or sliced over the rainbow salad. Top with coriander if using.
Recipe Note
Make it a bowl: Serve with rice or quinoa for a more filling meal.
Dairy-free: Omit cheese or use plant-based alternative.
Meal prep: Store salad and chicken separately, combine just before eating.
