Air-Fried Japanese Katsu Curry

Ingredients
- ½ cup rice

1 brown onion, diced

1 carrot, roughly chopped

1 potato, roughly chopped

2 tbsp Mingle’s Japanese Curry Recipe Base

1 tbsp tomato paste

1 cup chicken stock
- 2 x 150g chicken breast fillets

4 tbsp flour
-
1 egg, beaten
-
½ cup bread crumbs
-
1 tbsp corn flour (optional, if you want to thicken the curry)

2 tbsp chopped spring onions

2 tbsp pickled ginger
-
2 tsp Mingle’s Everything Bagel Seasoning

Directions
Cook the Rice:
Prepare rice according to packet instructions.
Make the Curry:
Heat a pan over medium heat.
Add onion, carrot, and potato. Cook for 2–3 minutes until onion turns translucent.
Stir in Mingle’s Japanese Curry Recipe Base and cook for 2 minutes until fragrant.
Add tomato paste and chicken stock. Bring to a boil for 3 minutes, then reduce heat and simmer, covered, for 10 minutes.
Prepare the Chicken:
Coat chicken breast in flour, dip in beaten egg, then coat with bread crumbs.
Air fry at 200°C for 12 minutes.
Thicken the Curry (Optional):
If you want to thicken the curry, mix corn flour with 50ml water to create a slurry.
Stir the slurry into the curry for the last 3 minutes of cooking.
Assemble & Serve:
Remove chicken from the air fryer, let rest for 5 minutes, then slice.
Serve rice topped with curry, crispy chicken, spring onions, pickled ginger, and a sprinkle of Mingle’s Everything Bagel Seasoning.
