15-Min High Protein Chicken Folded Wrap

Ingredients
- 1 large wrap

1 tbsp Mingle Peri Peri seasoning

1 chicken thigh (approx. 120g)

½ an avocado (mashed)
-
2 slices of tomato
-
1 tbsp Greek yoghurt
-
2 Romaine lettuce leaves
Directions
- Coat the chicken thigh in the Mingle Peri Peri seasoning and cook in the air fryer at 200°C for 10 minutes. Let rest for 2 minutes, then slice.
Cut the wrap from one side into the middle (as per the video) and assemble each quadrant with:
(1) avocado
(2) yoghurt and lettuce
(3) sliced Peri Peri chicken
(4) tomato slicesFold the wrap, then crisp in a pan on high heat for 30 seconds on each side.
Cut down the middle and enjoy!
