Ingredients

Mingle Spag Bol Recipe Base
-
500g of lean beef, chicken, lentils or plant based mince alternatives (why not multiple!)

2 tbsp extra virgin olive oil
-
1 onion, diced
-
1 garlic clove, minced
-
2 tbsp tomato paste
-
200mL passata
-
400g tin tomatoes
-
250mL low sodium beef stock or bone broth
-
1 carrot, diced
-
1 zucchini, grated
-
Wholemeal pasta or zoodles
-
Parmesan or nutritional yeast, sprinkled on top
-
150mL low fat milk - see step 3

Fresh basil

Directions
Heat 2 tbsp of extra virgin olive oil in a large pot over medium heat. Add onion, garlic & tomato paste. Cook for 3 mins.
Add protein & Mingle's recipe base, cooking until browned. Add remaining veggies. Cook for 2 mins.
Add passata, tin of tomatoes & low sodium stock. Cover the pot & lower the heat to simmer for 20 mins.
Optional: To elevate your Spag Bol even further, add 150mL of low fat milk & cook for an additional 10 mins.Serve with wholemeal pasta or zoodles. Top with some parmesan cheese and fresh basil. Yummo!
