Sweet Potato Curry
INGREDIENTS

500g Protein. We used:

- Chickpeas

3-4 Types of Veggies. We used:

- Onion

- Sweet potato

- Baby spinach

30g CURRY IN A HURRY sachet

400ml Coconut milk
-
200ml Stock. We used:
-
- Vegetable

METHOD
STEP 1:
Prepare ingredients by cubing veg. Heat 2 tbsp coconut oil in a large pot over medium heat.
STEP 2:
Add onion, cooking until it starts to brown. Mix in remaining veggies and coat all ingredients in sachet contents.
STEP 3:
Pour in coconut milk and stock, cover and lower the heat to simmer for 15-25 mins. Mix through the spinach and serve with grains or cauliflower rice.
We added a garnish of crushed peanuts and coriander.
