A SIMPLE, HEALTHY & EASY SATAY CHICKEN RECIPE THAT WILL LEAVE THE WHOLE FAMILY WANTING SECONDS!

HOW TO MAKE THE CLASSIC SATAY CHICKEN  IN 6 SIMPLE STEPS:

To create this recipe all you need to do is pick your protein, a range of vegetables, then add the star of the dish...Mingle’s Satay Stir-Fry Spice Blend  and grab your pantry staples of coconut cream and peanut butter. Serve over grains and garnish with chilli, coriander and crushed peanuts.

QUICK & EASY SATAY CHICKEN STIR FRY RECIPE

- Serves 4

- Whipped up within 30 mins

INGREDIENTS:

❏  Coconut oil

❏  1 onion (diced)

❏  500g of chicken (cubed)

❏  3 types of veggies (diced)

❏  Mingle's Satay Stir-Fry spice blend

❏  5 tbsp of peanut butter. We recommend 99th Monkey's Australian Peanut Butter. 

❏  200ml of coconut cream

❏  200ml of stock ( we used chicken)

❏  Rice

❏  Optional: chilli, crushed peanuts, coriander

INSTRUCTIONS:

  1. Heat coconut oil in pan over a medium heat
  2. Add chicken and onions. Cook for 3-5 minutes or until golden
  3. Mix in Mingle Satay Stir-Fry Sachet contents
  4. Add veggies and peanut butter 
  5. Stir in coconut cream and stock
  6. Last step, simmer for 20 minutes. We've served our satay chicken with rice, so at this point, whilst your satay is simmering we would recommend preparing some rice. After 20 minutes of your satay cooking, it’s time to plate up. We have garnished ours with chilli, coriander and crushed peanuts.
