Mingle's Mexican Fiesta Rice


1 X cup of rice
1 X bunch of coriander (chopped)
1 X can of black beans
1 X onion (chopped)
1 X carrot (chopped)
1 X can of tomatoes (400g)
2 cups of chicken or veggie stock
1 X lime
1 X small sour cream container
2 X tablespoons of olive oil
2 X tablespoons of tomato paste
1 X de-seeded chilli (do not add if you do not like spicy food)
2 X garlic cloves
Mingle Spicy Mexican Seasoning


1. Rinse rice under water until the water runs clear. Chop onion, carrot, garlic & chilli.
2. Mix sour cream, chopped coriander, half a lime juice with salt and pepper to taste. Set aside in the fridge.
3. In a large pan on medium heat the oil. Add carrot, onion, garlic and chilli. Cook until translucent.
4. Add rice, cook until slight toasted and translucent. Add 3 x tbsp of Mingle Spicy Mexican Seasoning and heat through.
5. Add tomato paste, canned tomato and stock. Bring to boil. Reduce heat to low. Simmer until rice is cooked. Stir occasionally.
6. Add back beans 5 minutes before cooked. Stir in remaining coriander. Serve with a dollop of sour cream mixture. For a complete meal, serve with Mingle's Charred Corn & Avocado Salsa & Char Grilled Mexican Chicken.
