Mingle's Meatballs


1 X egg
Mingle Garlic & Herb Seasoning
500g of mince 50/50% (beef & lamb)
200 ml of chicken or veg stock
1 X cup of frozen broad beans
1 X red onion (diced)
1 X bunch of mint (finely chopped)
1 X bunch of parsley (finely chopped)
3 X tablespoons of yoghurt
1 x can of cannelloni beans
1 X lemon
3 x tablespoons of olive oil
1/4 X cup of bread crumbs


1.Mix mince, 3 x tbsp of Mingle Garlic & Herb Seasoning, bread crumbs & eggs. Shape into ping pong ball sized meatballs.
2.Heat some oil in the pan and sear both sides of meatballs. Remove once brown.
3. Add onion to pan and saute until translucent. Add both beans and 200 ml of stock and reduce for 5 minutes.
4. Add meatballs and simmer slowly covered for 15 minutes. 
5. Top with chopped parsley, mint and a dollop of yoghurt. Season with salt and pepper to taste.
6. Serve with crusty bread to soak up the sauce.
