Mingle's Lamb & Chicken Kebabs


4 X chicken thighs & lamb leg steaks cut into chunks
1 X  small tub of yoghurt
1 X lemon
1 X capsicum (cubed)
1 X eggplant (cubed)
1 X red onion (chunks)
1 X bunch of mint (chopped)
1 X bunch of parsley (chopped)
3 X tablespoons of olive oil
Mingle All Purpose Seasoning 


1. Cut meat and veg into chucks (2 cm cubes).
2. Mix 3 tablespoons of Mingle All Purpose Seasoning, yoghurt and lemon in a bowl. Coat meat/vegetables in marinade. Leave for ideally two hours, but canned be used straight away. 
3. Skewer meat and veg. (tip - soak skewers in water for 30 mins before to avoid burning).
4. Put over fire and cook until charred on outside and moist on the inside.
5. Finely chop mint, parsley and capers. Mix with yoghurt, olive oil and lemon juice to create your sauce. 
6. Top kebabs with sauce and serve with one of Mingles sides. Season with salt & pepper to taste.
