Mingle's Holy Moly Broccomoli with Spicy Mexican

Mingle's Holy Moly Broccomoli


2 X avocado cubed
1/2 red onion (chopped finely)
10 X cherry tomatoes (cubed)
1 X bunch of coriander (chopped)
1 X bunch of mint (chopped)
1 X lime
Mingle Spicy Mexican Seasoning
1 X tablespoon of olive oil
2 X heads of broccoli



1. Blanch broccoli until just cooked. Put straight into an ice bath to ensure it doesn't go mushy and stays vibrant green.
2. Finely dice your onion, quarter your cherry tomatoes and chop your coriander and mint roughly.
3. Make dressing out of lime, 1 tablespoon of Mingle Spicy Mexican Seasoning, olive oil and salt and pepper to season.
4. Finely chop the broccoli into little chunks. Mash your avocado to your liking. Mix all ingredients together in a bowl.
5. Pour dressing and cover the Broccomoli.
6. Serve up as a side to any of our dishes or with some corn chips.
