1. Lay down a piece of cling wrap on your kitchen bench. Place a chicken breast on top of the cling wrap. Cover the top of the breast with another piece of cling wrap.

2. Bash the breast until it is large and flat. The cling wrap will prevent it from breaking off and going everywhere.

3. Lay 4-6 slices of prosciutto on a plate to form a sheet. Place the flattened chicken breast on top of the prosciutto.

4. Sprinkle Mingle Garlic and Herb seasoning over the chicken breast.

5. Stuff the centre of the chicken with finger sized slices of mozzarella along the centre.

6. Top the chicken with cheese, diced tomatoes & finely sliced lemon rind.

7. Roll up the chicken and filling into a log using the prosciutto to enclose. Repeat.

8. Brown in a oven proof pan on all sides and then place in the oven at 180C for 10 minutes until cheese is oozing

9. In a separate pot, blanch some broccolini. Melt some butter with Mingle Garlic and Herb Seasoning and a squeeze of lemon. Toss broccolini in mixture. Serve together.
