These are like a Mexican take on San Choy Bows! Easy, fresh with just the right amount of spicy kick.. the perfect go-to dinner for Spring or Summer when the time is not on your time!


What you need:
  • 1 Iceberg lettuce

  • 1 Tbsp coconut oil

  • 1 brown onion, diced

  • 400g turkey mince

  • 1 Zucchini (grated)

  • 3 Tbsp Sofia Spicy Seasoning

  • 1 avocado, diced

How to make:
  1. In a medium pan sauté the brown onion on medium heat in the coconut oil until golden.
  2. Add the mince, grated zucchini, Sofia Mexican seasoning and brown the meat. Stir mixture around until mince is cooked through. 
  3. Cut the base off the iceberg lettuce and carefully peel off as many 'cups' as you can. (It helps to run the lettuce underwater as you do it).
  4. Fill each cup with the turkey mince filling, top with avocado and some extra chilli if you want a little extra heat.
