Curry in a Hurry

INGREDIENTS

  • 500g Protein. We used:
  • - Chicken but you can also use... Beef,  Lamb, Tofu
  • 3-4 Types of Veggies. We used:
  • - Onion
  • - Carrot
  • - Broccoli
  • - Sweet potato
  • 30g Mingle's CURRY IN A HURRY sachet (Now available at COLES)
  • 400ml Coconut milk
  • 200ml Stock. We used:
  • - Chicken but you can also use Beef or Vegetable stock

METHOD

STEP 1:

Prepare ingredients by chopping and cubing protein and Veg. Heat 2 tbsp Coconut Oil in a large pot over medium heat.

 

STEP 2: 

Add protein and onion, cooking until it starts to brown. Mix in remaining veggies and coat all ingredients in sachet content.

 

STEP 3:

Stir in coconut milk and stock, cover and lower the heat to simmer for 15-25 mins. Serve with grains or cauliflower rice.
