Curry Chicken Salad

ingredients

    • 500g Protein. We used:
    • - Chicken
    • 3-4 Types of Veggies. We used:
    • - Spring onion
    • - Capsicum
    • - Cherry tomatoes
    • - Baby spinach
    • - Apple
    • 30g Mingle CURRY IN A HURRY sachet (now in COLES)
      • Brown rice
      • Olive Oil 

         

        METHOD

        STEP 1:

        Prepare ingredients by chopping and cubing protein and veg. Rub 3/4 of the spice sachet into the oiled protein. into Heat 2 tbsp coconut oil in a large pot over medium heat.

        STEP 2: 

        Cook chicken tenderloins, cooking 5-7 mins until it starts to brown. Take off the heat and let sit for 2 mins. Then, cut into cubes.

        STEP 3:

        Cook Brown rice and let cool.

        STEP 4:

        Mix together the brown rice and vegetables in a large bowl. Stir the remaining spice through with 2 tablespoons of olive oil, and serve.
