Create a Southern Indian Madras-Style Curry Chicken bake. Super easy to whip it up under 30 minutes! Perfect for those who want to spice up their weeknight meals!

Curry Chicken Bake



❏ 500g chicken thighs

❏ 200ml coconut milk

❏ 1 large onion

❏ ½ (about 650g) butternut pumpkin, cubed

❏ 6-8 cherry tomatoes

❏ 200g green beans, trimmed

❏ 120g pkt baby spinach

❏ 30g Mingle's Curry In a Hurry Spice Blend


  1. Preheat oven to 180C or 160C fan-forced.
  2. Meanwhile, season and rub the chicken thighs with Curry in a Hurry spice blend. 
  3. Place the chicken thighs, butternut pumpkin, onions and cherry tomatoes into the baking tray, and mix in the coconut milk with the remaining of the spice blend. Bake for 30 min
  4. Set aside to cool for 5 min and add in the spinach and green beans.
  5. Serve!
