Cheat Chicken Fajitas

Nothing beats a healthy Mexican dish on a hot summer night. Not only is it tasty, but it's totally one of the easiest meals to cheat with when cooking! Our Cheat Chicken Fajita Tacos are so easy and healthy you'll be wanting to cook it every night!

Cheat Chicken Fajitas

 

Ingredients:
  • 500g chicken mince

  • ½ red capsicum , thinly sliced

  • ½ yellow capsicum, thinly sliced

  • ½ orange capsicum, thinly sliced

  • 2 avocados

  • 2 red onions, 1 sliced and 1 diced

  • 1 lime, juiced

  • handful of fresh coriander, chopped

  • salt and pepper
  • cheese, salsa, sour cream etc, for serving

Instructions:
  1. In a medium frypan, cook the chicken mince, sliced red onion, capsicums and Mingle seasonings until browned and fragrant.
  2. Meanwhile make the guacamole by mashing the avocado with a fork in a bowl and add the diced red onion, lime juice, coriander and season with salt and pepper.
  3. To make the tacos, place some chicken fajita in a lettuce cup and top with guac plus your favourite toppings
  4. Serve!
