Spicy Stuffed Sweet Potato

We love taking comfort dishes to the next levels with Sofia. This stuffed sweet potato number is the BOMB and hits the spot on so many levels. 


  • 1 Tbsp coconut oil
  • 4 sweet potatoes
  • 1 brown onion, diced
  • 500g chicken mince
  • 2 Tbsp of Mingle’s Sofia Spicy seasoning
  • 1 zucchini, diced
  • 1 cup peas
  • 100g baby spinach
  • 100g baby spinach
  • 1 cup peas
  • 2 avocados, cut into squares for serving


  1. Preheat the oven to 180c and line a baking tray. Place the sweet potatoes into the oven and allow to cook for 80 minutes or until soft when cut with a knife.
  2. Meanwhile, in a medium fry pan, melt the coconut oil and then add the onion and allow to caramelize. Once it’s brown, add the chicken mince, Sofia spicy seasoning, and zucchini and cook for 10 minutes. Break up the mince using a flat-ended wooden spoon.
  3. Once the mince is cooked, add the peas and spinach and cook for another 2-3 minutes or until spinach has wilted.
  4. Once the sweet potatoes are finished, slice them down the centre (only ¾ the way through though) and fill with the mince and top with avocado.
