Broccoli, Cauliflower and Feta Fritters

Not sure what to make for dinner tonight? These fritters are delicious and so easy to make, as well as being a great way to get your veggies in!

What you need:
  • 1 cup diced cauliflower

  • 1 cup diced broccoli

  • 1/3 cup feta

  • 2 eggs

  • 1 tbsp wholemeal flour

  • coconut or olive oil

  • 2 tbsp Sally Ranch seasoning

How to make:
  • Combine broccoli, cauliflower, feta, eggs, Sally and flour in a bowl.
  • Heat a large frying pan over medium heat and add 1 tbsp of oil.
  • Once hot, scoop mixture into a fritter shape and place into pan.
  • Cook for 3-4 minutes on each side or until golden brown. Do this until you run out of batter.
