Vegan Stuffed Sweet Potatoes

You will not believe how good this vegan mince is. Don’t dis it before you try it!

Ingredients

Directions: 

  1. Preheat the oven to 180c and line 2 baking trays. On one tray, place the sweet potatoes flesh side down and bake for 45 minutes.

  2. Meanwhile, blitz the cauliflower in a food processor until rice sized bits form. Place the cauliflower rice into a bowl. Then blitz the walnuts until chopped. Mix together the cauliflower rice, walnuts, Minge’s Siena Garlic and Herb Seasoning and Mingle’s Sofia Spicy Seasoning and tamari. Place the mixture onto a tray and spread out. Drizzle with olive oil and bake for 15-20 minutes or until golden.

  3. Once the sweet potatoes are cooked, scoop out some of the flesh and save for another time. In a bowl, mash together the avocado, red onion, lime juice and salt and pepper.

  4. Stuff with the ‘mince’ and serve with the guacamole.
