These are like a Mexican take on San Choy Bows!
What you need:
1 iceberg lettuce
1 Tbsp coconut oil
1 brown onion, diced
400g turkey mince
1 Zucchini (grated)
3 Tbsp Sofia Spicy Seasoning
1 avocado, diced
How to make:
- In a medium pan sauté the brown onion on medium heat in the coconut oil until golden.
- Add the mince, grated zucchini, Sofia Mexican seasoning and brown the meat. Finally, add the peas and cook for 5 minutes.
- Cut the base off the iceberg lettuce and carefully peel off as many 'cups' as you can. (It helps to run the lettuce underwater as you do it).
- Fill each cup with the turkey mince filling and top with avocado!
