Let the oven do all the hard work for you! Simply SHAKE and then BAKE with the help of Mingle's Smokey Sass!
- 700g kent pumpkin, cut into 3cm chunks
- 1 cauliflower, cut into florets
- 1 red onion, sliced
- 2 zucchinis, sliced
- 2 red capsicums, cut into chunks
- 8 chicken thighs
- 2 Tbsp of Mingle’s Sass Smokey seasoning
- 3 Tbsp coconut or olive oil
- Preheat the oven to 180c and line two baking trays. Cover both trays with The vegetables and chicken thighs and drizzle with coconut or olive oil.
- Sprinkle with Sass smokey seasoning
- Bake for 50 minutes or until golden and then serve!
