SALLY'S ZUCCHINI FRITTERS

Not sure what to make for dinner tonight? These fritters are delicious and so easy to make, as well as being a great way to get your veggies in!

Mingle Seasoning Fritters

What you need:

  • Makes 6-10 fritters
  • 1 cup zucchini, grated (about 1 large zucchini)

  • 1 cup of finely diced cauliflower

  • 1/2 cup almond meal

  • 1 egg

  • 2 Tbsp Sally ranch seasoning

  • 1 Tbsp coconut oil

  • 1/3 cup of feta

How to make:

  1. Combine zucchini, cauliflower, feta, eggs, Sally and flour in a bowl.
  2. Heat a large frying pan over medium heat and add in 1 tbsp of oil.
  3. Once hot, scoop mixture into a fritter shape and place into pan.
  4. Cook for 3-4 minutes on each side or until golden brown. Do this until you run out of batter.
