Not sure what to make for dinner tonight? These fritters are delicious and so easy to make, as well as being a great way to get your veggies in!
What you need:
- Makes 6-10 fritters
1 cup zucchini, grated (about 1 large zucchini)
1 cup of finely diced cauliflower
1/2 cup almond meal
2 Tbsp Sally ranch seasoning
1 Tbsp coconut oil
- 1/3 cup of feta
How to make:
- Combine zucchini, cauliflower, feta, eggs, Sally and flour in a bowl.
- Heat a large frying pan over medium heat and add in 1 tbsp of oil.
- Once hot, scoop mixture into a fritter shape and place into pan.
- Cook for 3-4 minutes on each side or until golden brown. Do this until you run out of batter.
