Chicken breasts can get so dry! So we like to cook ours with lots of olive oil and have it sitting in juicy tomatoes.
- 2-4 chicken breasts
- 400g mozzarella cheese
- 2 zucchinis diced
- 3 tins of diced tomato (1200g)
- 3 Tbsp Mingle’s Siena Garlic and Herb Seasoning
- steamed beans to serve
- olive oil for drizzling
Preheat the oven to 180c. In a baking dish place the chicken breasts in the tray. Cover with the tomatoes, zucchini and sprinkle with Siena. Top with cheese and drizzle with lots of olive oil.
Place in the oven for 30 minutes.
Once finished, serve with steamed beans and olive oil.
