Stuffed Capsicums are one of those meals that seem a lot harder than they actually are to make!
This no-fuss recipe will get your taste buds excited and keep that lazy gal inside you happy as well because it is so easy to make!
Try it yourself, because we assure you, you will not be disappointed.
What you need:
500g beef or turkey mince
1/2 brown onion, finely diced
1 cup cooked rice
1 garlic clove, minced
1 cup tomato passata
2to 4 tablespoons Sass Smokey Seasoning
How to make:
- To begin, cut the tops off your capsicums and discard the seeds and stems from the inside and give them a rinse. Then place them in a large enough pot that allows you to cover them with water, bringing the water to the boil and partly cook the capsicums. About 2 minutes.
- In a large frying pan, cook off your mince, onion and garlic over medium heat, until your meat has turned brown. Optional to drain any liquid that has formed then mix in your rice, passata sauce and Sass Smokey Seasoning.
- Heat your oven to 170°C
- Stuff your capsicums with the meat mixture. Stand the capsicums upright in a baking tray topping them with more of the mixture if desired.
- Cover with tinfoil and bake in the oven for 10 minutes. Uncover and top with cheese and cook for a further 10-15 minutes or until cheese has melted and capsicums have become tender.
- Serve and enjoy!
