Now, THIS is a healthy ice cream. Low in sugar and high in fat so you literally won’t be able to fit the whole tub in your stomach at once!
What you need:
2x 400ml cans of full fat coconut cream (we recommend "Ayam" as it doesn't split and has no preservatives)
1/2 cup natural peanut butter (where the only ingredient is peanuts!)
How to make:
- Pour the coconut cream into a loaf tin or similar dish and mix well so there isn't any lumps. Then dollop the peanut butter all over the coconut cream and swirl it through with a knife.
- Sprinkle with Stella and then freeze for 6 hours - overnight. To serve, remove it from the freezer 15 minutes before you want to eat it to let it defrost slightly.
