Sweet Potato Brownies

We love getting veggies in at every meal and now we can get them in for DESSERT!!

What you need:
  • 1 cup sweet potato puree (steam sweet potato and mash or blend it)

  • 3 Tbsp coconut flour

  • 2 tbsp raw cacao powder

  • 1/2 tsp pure vanilla essence

  • 1/4 tsp gluten free baking powder

  • 1/4 cup Stella coconut & cacao seasoning

  • 50 g dark chocolate (90%+)

  • 3 eggs, whisked

  • 1/4 cup coconut oil

  • 1/4 cup rice malt syrup

How to make:
  • Preheat the oven to 180c. Grease the baking pan and line with baking paper
  • Combine dry ingredients. In a separate bowl add all the wet ingredients including sweet potato flesh and whisk.
  • Stir in dry ingredients and mix well. Pour into lined baking pan and smooth out
  • Bake for 20-25 minutes
