Eggplant Parmi

Life gets good when you can make a dish without the refined carbs and it tastes amazing

Just be sure to check your Napoletana sauce for hidden sugar and vegetable oil! 

Serves 2 as a side

What you need:
  • 1 eggplant, sliced into 1 cm rounds

  • 2 cups Napoletana sauce (check for hidden sugar and vegetable oil)

  • 2 Tbsp Siena garlic & herb seasoning

  • 1 cup ricotta cheese

  • 1 cup basil leaves to serve

How to make:
  1. Preheat the oven to 180c. Place the eggplant pieces into an ovenproof dish and top with the sauce, Siena and ricotta
  2. Bake for 40 minutes until eggplant is soft and ricotta is starting to get golden
