Chicken Bowl with Avocado

Use the colours of the rainbow to guide you in plating up your meals. The more colours the better!

What you need:
  • 1/2 cauliflower, cut into florets

  • 1 eggplant, sliced into 2cm rounds

  • 1 zucchini, sliced into 2cm rounds

  • 100g green beans, topped and tailed

  • handful of rocket

  • 1 cucumber, sliced

  • 1 chilli, sliced thinly

  • 1/2 an avocado

  • Roasted chicken to serve

  • 1 Tbsp olive oil to serve

  • Sass Smokey Seasoning for sprinkling

  • coconut oil for spraying

  • basil leaves to serve

How to make:
  • Preheat the oven to 190c and line a baking tray. Lay out the cauliflower, eggplant and zucchini and spray with coconut oil. Sprinkle over Sass seasoning and bake for 30 minutes.
  • Meanwhile, steam the green beans in a double boiler.
  • To make the bowl, add in some rocket, beans, cauliflower, eggplant, zucchini, chilli, cucumber, basil leaves 1/2 an avocado and the roast chicken. Drizzle with olive oil. Use the rest of the vegetables for lunch tomorrow!
