Probably the world best way to eat zucchini. Just sayin.
What you need:
1/2 cup Parmesan cheese, grated
1 Tbsp Sally ranch seasoning
How to make:
- Preheat the oven to 200c and line a baking tray.
- Coarsely grate the zucchini. Place into a bowl with some paper towel or a cheese cloth and squeeze out some of the moisture
- Place the zucchini with the rest of the ingredients into a bowl and mix well to combine.
- Mold the mixture into hash brown shapes on the baking tray and cook for 25-30 minutes or until golden and crispy.
