Zucchini Hash Brown

Probably the world best way to eat zucchini. Just sayin.

What you need:
How to make:
  1. Preheat the oven to 200c and line a baking tray.
  2. Coarsely grate the zucchini. Place into a bowl with some paper towel or a cheese cloth and squeeze out some of the moisture
  3. Place the zucchini with the rest of the ingredients into a bowl and mix well to combine.
  4. Mold the mixture into hash brown shapes on the baking tray and cook for 25-30 minutes or until golden and crispy.
