What you need:
1 cauliflower steak
2 fresh eggs
1/4 cup white vinegar
1/2 an avocado
1 Tbsp Sofia Spicy Seasoning
coconut oil for spraying
How to make:
- Preheat the oven to 190c and spray the cauliflower steak with coconut oil and season with Sofia.Bake for 25 minutes
- Meanwhile, bring a pot of water with the vinegar to the boil. (It should be 10-12cm deep). Once it is bubbling, crack two eggs into the water to poach. Cook for 2 - 2.5 minutes and remove using a slotted spoon.
- In a bowl, mash the avocado and serve into the cooked cauliflower steak, topped with two poached eggs!
