Smashed Avocado and Eggs on Spicy Cauliflower Toast

Swap your bread for a low-carb option that won’t spike your blood sugar levels and contains more fiber and vitamins!

What you need:
  • 1 cauliflower steak

  • 2 fresh eggs

  • 1/4 cup white vinegar

  • 1/2 an avocado

  • 1 Tbsp Sofia Spicy Seasoning

  • coconut oil for spraying

How to make:
  • Preheat the oven to 190c and spray the cauliflower steak with coconut oil and season with Sofia.Bake for 25 minutes
  • Meanwhile, bring a pot of water with the vinegar to the boil. (It should be 10-12cm deep). Once it is bubbling, crack two eggs into the water to poach. Cook for 2 - 2.5 minutes and remove using a slotted spoon.
  • In a bowl, mash the avocado and serve into the cooked cauliflower steak, topped with two poached eggs!
