Mexican Cups

These are like a Mexican take on San Choy Bows!

What you need:
  • 1 iceberg lettuce

  • 1 Tbsp coconut oil

  • 1 brown onion, diced

  • 400g chicken mince

  • 1 red capsicum

  • 3 Tbsp Sofia Spicy Seasoning

  • 1/2 cup green peas

  • 1 avocado, diced

  • Coriander for garnishing

How to make:
  1. In a medium pan sautè the brown onion on medium heat in the coconut oil until golden.
  2. Add the red capsicum and continue to cook for another 5 minutes, until they have softened. Then add the mince and spice and brown the meat. Then add the peas and cook for 5 minutes.
  3. Cut the base off the iceberg lettuce and carefully peel off as many 'cups' as you can. (It helps to run the lettuce under water as you do it).
  4. Fill each cup with the chicken mince and top with avocado and coriander leaves!
