Mex Tex Bowl

Load up on the avo, ’cause there is no such thing as too much avo!

What you need:
  • 1/2 cup cooked quinoa

  • 1/2 an avocado, cut into cubes

  • 1/4 red onion, diced

  • 1 Lebanese cucumber, diced

  • 1/2 a tomato, diced

  • 1/4 cup canned corn kernels

  • 2 Tbsp olive oil for serving

  • 1 tsp Sofia Spicy seasoning

How to make:
  1. Place each ingredient in the bowl and then drizzle with olive oil and sprinkle with Sofia seasoning and enjoy!
