Because everything looks better in a bowl, right? These deconstructed tacos are so simple to throw together, yet taste so good. This meal is perfect when you are wanting ‘ a little bit of this, and a little bit of that.’ Using our spicy Sofia seasoning is also a healthy and natural alternative to spice up your chicken, compared to most packet Mexican seasonings that are super high in salt and hidden with fillers.
What you need:
- brown rice and/or quinoa
- cherry tomatoes
- 1/2 ripe avocado
- 1 carrot
- chicken breast
- Mingle's spicy Sofia seasoning
- sour cream
How to make:
- Cook brown rice and/or quinoa according to packet instructions.
- Heat a pan over medium heat and drizzle olive oil onto the pan. Season chicken with Sofia. Cook for 5-6 minutes, then flip over and cook the other side for another 2-3 minutes. When the middle is no longer pink, take off the heat.
- Serve in a bowl with julienned carrots, chopped cherry tomatoes, the rice, a dollop of sour cream and 1/2 avo.
