Possibly the quickest breakfast known to man
What you need:
200g baby spinach
1/2 bunch of tomatoes on a vine
3 large button mushrooms, stalks removed
3 Tbsp olive oil
1 spring onion, sliced
How to make:
- Preheat the oven to 180c.
- In a baking dish, place the tomatoes and mushrooms in the dish, drizzle with half the olive oil and cook for 10 minutes.
- Remove the dish from the oven and add the baby spinach and crack 2 eggs into the baby spinach. Sprinkle with Sally seasoning all over the dish and return to the oven to cook for 6-8 minutes or until egg whites are not long translucent.
- Sprinkle over the spring onions and serve!
