Egg Baked in Avocado

The perfect snack full of healthy fats that will keep those sugar cravings at bay as the 3pm sugar slump rolls in…  Plus with just one egg you will get 29.5% of your recommended daily intake of selenium, which is vitally important for the stimulation of your thyroid!

Serves 1 as a snack, double batch for a meal.

How to make:
  1. Preheat the oven to 200c
  2. Scoop out some of the avocado flesh around the whole from the pip to create a larger hole for the egg.
  3. Crack the egg into a glass dish and slowly pour the egg into the hole. Sprinkle with Sofia Spicy Seasoning. Place in a small oven proof dish with sides (to help it stay stable) and cook for 15 minutes or until egg is cooked through. Serve with some fresh herbs as the perfect snack!
