This ‘rice’ is the perfect side dish to go with meats or to be tossed through a salad!
What you need:
1/2 head of cauliflower cut into florets
1 Tbsp coconut oil
1/4 cup flat leaf parsley, chopped
How to make:
- Pulse the cauliflower florets in a food processor until rice sized bits form
- Heat the coconut oil in a small fry pan and saute the cauliflower, spice and parsley until soft
